hmm. it's already an RF signal, could this be the problem? 

It's an RCA, but it's not a composite signal, it's RF.

You should be

able to hookup one of those game adapters (like for old Atari's and stuff)

and plug into that with the RCA.  You can then see the image when it's

played, or if you put into pause/record you should see the live picture.

indeed, channel 3 or 4 I believe. your tv should be on the same channel.
